Homemade Hamburger Buns

I will never buy hamburger buns again! I LOVE this recipe. I use to make homemade buns for my sloppy joes from my roll recipe, but they were always to soft. This recipe is amazing, the buns are moist yet firm! Another plus is they are super easy and fast to make. I promise, once you try them, you won't go back!! Yummy!!

Homemade Hamburger Buns

Ingredients:
1 cup lukewarm water
2 T unsalted butter, room temperature, creamed
1 egg
2 1/2 to 3 cups all-purpose flour (approximately)
1/4 cup sugar
1 t salt
1 T instant yeast
1 egg yolk (+1 T water)
sesame seeds (optional)

Directions:

Sprinkle the yeast into the water and leave for 5-10 minutes, until frothy. Stir to dissolve. Add remaining ingredients and mix well(I do this in my kitchen-aid). I let this knead in my Kitchen-Aid for ~10 minutes, until it is a soft, smooth dough. You could knead by hand on a lightly floured surface. I leave it in my mixer bowl, cover and let rise for 1 - 1 1/2 hour, until doubled in size. Divide dough into 8 pieces and shape into a flattened ball. Place the buns on a greased baking sheet, cover and let rise again for 30-40 minutes until puffy and doubled in size. Preheat oven to 375degrees. Glaze the buns with egg yolk and water mixture, then sprinkle with sesame seeds if desired. Bake the buns for 12 - 15 minutes, until golden brown. Remove them from the oven and cool them on a wire rack.

Asian Chicken Lettuce Wraps

I am always looking for fast, easy and nutritious meals for my busy weeknight meals.  These wraps have become one of our family favorites.  We serve these with a side of wontons or potstickers to complete the meal. The filling can be made ahead of time and reheated if your day is extra busy. Bibb lettuce is our favorite, but feel free to use iceberg or even romaine for this dish. I hope you enjoy these as much as we do!

Chicken Salad Sandwiches with Fruit and Almonds

Chicken salad sandwiches seem to be the go to item for baby and bridal showers.  I wanted to make some for the baby shower, but had a dillema.   While I like the main components in the salad, I really do not like the taste of raw onions and celery.  However, I still wanted some crunch and flavor in the salad.

Best Ever Chocolate Chip Cookies

The name says it all. These cookies are my (and my husband's) favorite cookies! Not just your average chocolate chip cookies, these babies come out of the oven with a slightly crisp outside while still remaining soft on the inside. Use Ghiradelli Milk Chocolate Chips and you will have achieved chocolate chip cookie perfection!
