Greek Salad


This has to be my all time favorite salad. Simply ingredients and a simple and tangy dressing to go on it. I love to serve this salad with a flank steak, turkey burgers or even baked chicken. If you love feta then I am sure this will become one of your favorite salads as well.







Greek Salad
adapted from South Beach Cookbook

head of romaine lettuce
1 cucumber, peeled and diced
1 tomato, diced
1 avocado diced
1/2 cup sliced red onion
1/2-3/4 cup crumbled feta cheese

Combine all ingredients above and add dressing. I add dressing to each plate so if I have leftovers they aren't soggy the next day!

Dressing
4 Tbsp olive oil
4 Tbsp lemon juice
2 tsp oregano
1 tsp salt

Whisk together the oil, lemon juice, oregano, and salt in a small bowl. Pour over the lettuce mixture and toss until coated. You will have some dressing left over!
