Herbed Cheese Bread

Whenever I serve pasta, I try to serve some type of bread and salad to go with it.  A couple of weeks ago I needed a new recipe that was quick and easy as well and tasty.  After searching some of my favorite cookbooks, I came across this Herbed Cheese Bread.
It's a great way to use up the last of a loaf or use the whole loaf if you choose.  I really like the herbed butter and the gooey cheese on top.  My kids, including Mike loved this bread so I guess it's a keeper!

Herbed Cheese Bread
from Essential Mormon Celebrations Cookbook

1 loaf French bread
1/2 butter, softened
2 cloves garlic, minced
1 tsp fresh oregano or 1/2 tsp dried
1 tsp fresh thyme or 1/2 tsp dried
2 cups grated mozzarella cheese

Cut loaf in half lengthwise.  Stir butter, garlic, oregano and thyme together in a small bowl.  Spread each half of loaf with herbed butter.  Sprinkle 1 cup cheese on each half of bread.  Broil until cheese is melted.  Cut into slices.

*I sprinkled Parmesan cheese on top of the butter before adding the mozzarella cheese, which added another wonderful flavor!
