Feta and Sun-Dried Tomato Turkey Burgers

I am in LOVE with these burgers!  They are so flavorful and unique.  Not to mention healthier than your average burger.  Aaron's first comment after biting into his burger was, "Wow!".  I'll take that :)  I served these burgers on homemade hamburger buns with Avocado Mayo.  All these components combined to make a truly gourmet burger.  Served with a side of sweet potato fries it was the perfect dinner.


Feta and Sun-Dried Tomato Turkey Burgers
slightly modified from Picky-Palate
2 Tablespoons extra virgin olive oil
1 lb ground turkey
1/2 cup crumbled feta cheese
1/4 cup sun-dried tomatoes, jarred in olive oil, chopped into small pieces
1/2 cup fresh baby spinach leaves, chopped
Pinch of Kosher salt, fresh cracked pepper and Lawry's Garlic Salt with Parsley
Hamburger buns and fresh baby spinach for serving

Avocado Mayonnaise
1/2 cup avocado, mashed
1/4 cup mayonnaise

Mash avocado and stir together with mayo until well combined.

Or, if you prefer, try this:

Sun-Dried Tomato Mayonnaise
1 cup mayonnaise
2 Tablespoons Sun-Dried Tomatoes, packed in olive oil, drained

Chop tomatoes into small pieces then mix together with mayo until well combined.

Stove-top:
Pour oil into a large skillet over medium heat.  Place turkey, feta, sun-dried tomato, spinach and seasonings into a mixing bowl.  Mix until just combined.  Divide into 4 equally sized patty's and place onto a plate.  Once all are formed, place in hot skillet.  You may need to work in batches.  Cook for 3-4 minutes per side or until golden brown and cooked through.

Indoor Grill:
Preheat grill to Sear.  Place turkey, feta, sun-dried tomato, spinach and seasonings into a mixing bowl.  Mix until just combined.  Divide into 4 equally sized patty's and place onto a plate.  Once all are formed, place burgers on the hot grill.  Close top and grill for 4-5 minutes or until cooked through.

To serve:
Spread mayo of your choice on the insides of hamburger buns, warmed if desired.  Top with burgers and baby spinach.  Enjoy :)

Ever since getting a slice of Lemon Cake from Starbucks a few years back I have been on a quest to find a good copycat recipe.  I've tried several and they were all fine, but this cake is officially the winner.  My search is over! I seriously could not imagine a more perfect lemon cake.   Lemon flavor shines throughout the cake, but the real punch of flavor comes from the delectable glaze. The cake itself is so moist yet fluffy and tender at the same time.  It's like a ray of sunshine on a cold winter's day! 

Pumpkin Spice Donuts

I love this time of year when the temperature drops and it's perfectly acceptable to make and eat all kinds of pumpkin things! I've been meaning to try my hand at cake donuts for sometime now and these pumpkin ones were calling my name.  Unlike yeast donuts that require a few rises and fry up nice and fluffy, these cake donuts come together pretty quickly (with a small chilling period) and are more dense and moist in texture. The outside gets all craggy and crispy which is perfect for collecting all the sugary glaze.  Such a delicious combo of textures and perfectly flavored with pumpkin and spices.  We loved these!! Note: I tried making a few of these in the air fryer as an experiment and was amazed at the difference in texture.  Not in a good way.  The air fryer ones were much tougher and not craggy and crispy.  So stick with frying these in oil and you won't be disappointed.
