Spinach Feta Hummus

     Ok, so we need to balance out the sweet stuff with a little healthy stuff!  I know it sounds strange, but my kids love hummus.  In fact it is one of their favorite snacks, besides just eating the beans from the can.  They love it with crackers, pretzel thins and pita bread.  It is a little expensive to buy so I thought I would give it a shot and make my own.  All you do it but all of the ingredients in a food processor and hit start, now that's easy!  The next combination I try will be using  garlic and roasted red pepper, or artichoke hearts and spinach  yum!
     I like hint, save the juice from the canned beans to use to thin the hummus out.  I thought the recipe made it a little to thick, but adding some of the juice helped a lot!  I hope your family enjoys this as much as mine did!
   



Spinach Feta Hummus

30 ounces, weight Garbanzo Beans Drained
1-½ cup Fresh Spinach
8 ounces, weight Feta Cheese
⅓ cups Olive Oil
5 Tablespoons Lemon Juice
4 Tablespoons Tahini (found over by the peanut butter)
2 Tablespoons Red Pepper Flakes
2 cloves Garlic, Peeled
2 teaspoons Salt

Combine the garbanzo beans, spinach, olive oil, lemon juice and tahini in a large food processor. Pulse until combined. Add the feta, red pepper flakes, garlic and salt. Pulse until combined. Taste and add salt or more red pepper flakes if desired.

I seriously could not imagine a more perfect lemon cake.   Lemon flavor shines throughout the cake, but the real punch of flavor comes from the delectable glaze. The cake itself is so moist yet fluffy and tender at the same time.  It's like a ray of sunshine on a cold winter's day! 

Pumpkin Spice Donuts

I love this time of year when the temperature drops and it's perfectly acceptable to make and eat all kinds of pumpkin things! I've been meaning to try my hand at cake donuts for sometime now and these pumpkin ones were calling my name.  Unlike yeast donuts that require a few rises and fry up nice and fluffy, these cake donuts come together pretty quickly (with a small chilling period) and are more dense and moist in texture. The outside gets all craggy and crispy which is perfect for collecting all the sugary glaze.  Such a delicious combo of textures and perfectly flavored with pumpkin and spices.  We loved these!! Note: I tried making a few of these in the air fryer as an experiment and was amazed at the difference in texture.  Not in a good way.  The air fryer ones were much tougher and not craggy and crispy.  So stick with frying these in oil and you won't be disappointed.
