Carmelized Grilled Pineapple

So this recipe is supposedly a copy-cat of Rodizo Grill.  I've never been there so I couldn't say for sure but I can tell you that these were delicious!  I absolutely love grilled pineapple and with this glaze they were even better.  These are a perfect side dish for any BBQ.  They go great with chicken, hamburgers, etc.  Even Brynlee who claimed she didn't like pineapple told me these were yummy.  So there you go. If I can get my 5 year old's seal of approval they must be good!

Carmelized Grilled Pineapple
modified from The Recipe Critic

Ingredients:
Pineapple cut into spears, or slices
1/4 cup brown sugar
3 TBSP Butter
1/2 tsp Cinnamon

Lay the pineapple on a pan. Mix the brown sugar, butter, and cinnamon together in a small sauce pan.  Cook  until sugar is dissolved.  Remove from heat and glaze pineapple with a pastry brush.  Place on the grill face down and glaze other side.  Grill for about 10 minutes. The glaze melts into the pineapple and is so amazing!

Asian Chicken Lettuce Wraps

I am always looking for fast, easy and nutritious meals for my busy weeknight meals.  These wraps have become one of our family favorites.  We serve these with a side of wontons or potstickers to complete the meal. The filling can be made ahead of time and reheated if your day is extra busy. Bibb lettuce is our favorite, but feel free to use iceberg or even romaine for this dish. I hope you enjoy these as much as we do!

Chicken Salad Sandwiches with Fruit and Almonds

Chicken salad sandwiches seem to be the go to item for baby and bridal showers.  I wanted to make some for the baby shower, but had a dillema.   While I like the main components in the salad, I really do not like the taste of raw onions and celery.  However, I still wanted some crunch and flavor in the salad.

Best Ever Chocolate Chip Cookies

The name says it all. These cookies are my (and my husband's) favorite cookies! Not just your average chocolate chip cookies, these babies come out of the oven with a slightly crisp outside while still remaining soft on the inside. Use Ghiradelli Milk Chocolate Chips and you will have achieved chocolate chip cookie perfection!
