White Chocolate Caramel Pretzel Churro Bars

 Guys, you NEED to try these bars! They are the perfect balance of sweet, salty, chewy, and crunchy. The Cinnamon Sugar sprinkled over the top adds a nice warm spiciness to the whole thing making for a very satisfying bite. So scrumptious without being overly sweet! 

If that didn't quite convince you, how about the fact that they are SUPER easy to make.  Perfect for when you don't have an hour or two to spend in the kitchen.

I love how these White Chocolate Caramel Churro Bars turned out!! One of my new favorite treats for Christmas or anytime!





White Chocolate Caramel Pretzel Churro Bars

*makes 1 sheet pan

Ingredients:

2 bags of Caramel Bits

2 TBSP Heavy Cream

1 1/2 cups white chocolate (I used Guittard Choc-Au-Lait)

1 1/2 TBSP Shortening

1/4 cup white sugar

1/2 TBSP Cinnamon

1/3 bag Pretzel Snaps (the square ones)


Directions:

Prepare a sheet pan by covering with a piece of parchment paper or greasing it.  

In a medium sized, microwave the caramel bits and cream on high for 1 1/2 min. Stir, then microwave for another 30 seconds.  Stir and repeat as needed until caramel is smooth and pourable.  

Scrape/ pour the caramel onto the pan.  Spread thin, covering the bottom.  Place pretzels into caramel placing as close together as possible.  

Microwave chocolate and shortening together in a medium bowl for 1 minute.  Stir, then return to microwave for 30 seconds more.  Stir until smooth then pour over caramel and pretzels.  Use a rubber spatula or spoon to spread the chocolate evenly over the top.  

In a small bowl, mix sugar and cinnamon together.  Sprinkle all over the top of the chocolate.

Let bars sit until chocolate is hardened up.  I left these overnight, but you could speed the process up by putting it in the fridge for 20-30 minutes or so.  Just be sure to let the bars sit at room temp for at least 15 minutes before to allow caramel to soften up.  

Cut into 1 1/2 in bars.  Eat immediately or store in an airtight container.

Note: Recipe can be halved to make a 9 X13 in pan.

I seriously could not imagine a more perfect lemon cake.   Lemon flavor shines throughout the cake, but the real punch of flavor comes from the delectable glaze. The cake itself is so moist yet fluffy and tender at the same time.  It's like a ray of sunshine on a cold winter's day! 

Pumpkin Spice Donuts

I love this time of year when the temperature drops and it's perfectly acceptable to make and eat all kinds of pumpkin things! I've been meaning to try my hand at cake donuts for sometime now and these pumpkin ones were calling my name.  Unlike yeast donuts that require a few rises and fry up nice and fluffy, these cake donuts come together pretty quickly (with a small chilling period) and are more dense and moist in texture. The outside gets all craggy and crispy which is perfect for collecting all the sugary glaze.  Such a delicious combo of textures and perfectly flavored with pumpkin and spices.  We loved these!! Note: I tried making a few of these in the air fryer as an experiment and was amazed at the difference in texture.  Not in a good way.  The air fryer ones were much tougher and not craggy and crispy.  So stick with frying these in oil and you won't be disappointed.
