Oatmeal Honey Whole Wheat Rolls

If you are afraid of making homemade bread, then here is a recipe for you.  I have posted Mother's Oatmeal Bread recipe a while back, which is a staple here at our house.  It doesn't take much effort and minimal amounts of ingredients.  We love it with homemade soups, toast in the morning and our favorite, french toast! Well this past week I came across a similar recipe but for rolls.  Now I love to make rolls because the kids can take them the next day as snacks or I will use them for mini sandwiches in the kids' lunch boxes.  I love when a recipe uses honey instead of the processed white sugar, which this does as well.  Mike loved this recipe and told me not to loose this one!  Maddie took them for a snack the next day and the boys ate one after school, I love no waste!!  I hope your family loves them as much as mine did!

Samoa Brownies

You can never have too many yummy brownie recipes!  If you love brownies and samoas, you will loves these.  Warm them up a little before you eat them, and the caramel will be nice and gooey.  Just the way I like it.

Bruschetta

This wonderful recipe was passed onto me by my sister in law Summer.  After hearing all about it, I knew I had to give it a try.  With all the abundance of garden tomatoes and basil this was a wonderful side dish to my pesto dinner.  The kids and I said we could just eat this for dinner with a little salad and be happy, but Mike needs a little more.  You do need to play ahead because the tomatoes need time to marinate before you add it to the toasted baguette, but other than that, super easy.  I hope you enjoy this as much as we did!  Thanks Summer!

Raspberry Lemon Cream Tarts

As you can tell I am into lemon right now!  I love lemon bars, lemon pie, lemon muffins, lemon chicken, lemon pancakes and anything else you can make with lemons.  I came across this recipe and with all my raspberries right now, I had to try it.  I was not disappointed and neither were the people I dropped these off to.  Great for picnics, potluck or even a late night mommy treat, why not we deserve it!  Enjoy. P.S. I used my  Easy Cream Cheese Pie Crust  recipe I posted a few weeks back for the crust.  Another change was I used my mini muffin pans to make min tarts, but Lauren used full size so use whatever makes you happy!

Lemon Filled Crepes with Strawberries

My kids are into crepes right now!  They love them with jam, fresh fruit, and powdered sugar.  This lemon cream filling was a wonderful treat for breakfast.  It wasn't to sweet or tart, just right, and with fresh fruit on top it made for a great breakfast. After breakfast, we had some of the cream left over so we used it as a fruit dip, yum.  I liked the idea of a fruit dip that wasn't so sweet.  It was a nice twist from the fruit dips I have used and seen in the past.  Hope you enjoy this no matter how you end up using it!

Pesto

I planted basil for the first time ever this Summer, and am loving having it readily available for use.  Since I now have quite a bit, I decided to attempt some pesto.  I loved this recipe!  It made a pretty thick pesto which is great for adding to a variety of pasta's, panini's, or even pizza.  The great thing about pesto is it is very versatile.  This recipe is perfect for my liking.  Toasting the pine-nuts adds a nice flavor, the parmesan cheese makes it nice and thick, while the garlic makes it flavorful but not overly pungent.  Even Brynlee, my 4 year old, loves this, and that's saying something for a girl who insists on having plain noodles when we serve Mac 'n Cheese or Spaghetti.

Vanilla Zucchini Muffins

The kids and I are swimming in zucchini, so we decided to make as many recipes as we can using this monster of a vegetable!  This was our first new recipe of the week and they were great.  Tyler decided that he does not like zucchini in muffins so he wasn't going to eat those "disgusting" this for breakfast.  But once the other kids started on their second, he had to at least try them!  Well to all of our surprise as well as his, he ate two as well and ate one later for a snack, crazy kid.  So if my zucchini hating son likes them maybe your kids might like them as well. They were incredibly moist and just an all around tasty muffin.  These will be baked again here for sure. Stay tuned for yet another yummy recipe to help use up all that zucchini.
