Honey-Lime Enchiladas

My sister, Abbie was the first to try this recipe. I had it on my menu for the week, but moved it up a few days after her review. I have search high and low for a good enchilada recipe with a white sauce. I am not a fan of the red sauce, so when I saw this recipe on Cookingalamode.blogspot.com, I had to try it. My husband, Mike gave these a 10 out of 10, very hard to get this score in our house! This recipe is very easy, fast and delicious!! Give it a try, you won't be disappointed .

Devil's Food Caramel Brownies

These are SO yummy! I made these tonight for a BBQ and they went fast and got rave reviews from the adults and kids alike. Seriously, what's not to love about caramel and chocolate chunks sandwiched between a brownie? Just look at the caramel oozing out the sides. Is your mouth watering yet? Next time you're got a sugar craving treat yourself to one of these babies. You deserve it :)

Lemon Cream Chicken

This is my new favorite pasta. It is made with the Lemon and Garlic Chicken from my previous post and is fantastic! I could eat it every day. No joke. It is intensely flavorful, nothing like you'd expect from a cream sauce, and the lemon makes you feel like you are eating a light dinner ( at least that's what I tell myself ). I originally found this recipe on but tweaked it just a tad to fit my liking.

Lemon and Garlic Grilled Chicken

Lemon and garlic make a wonderful combination and turn a plain chicken breast into something mouthwatering. A bonus to this chicken is it can be used in other dishes as well. Stay tuned for another yummy recipe which incorporates this delicious chicken!

Winter Spinach Salad

A nice change to the standard green salad. I love that my kids get a healthy helping of spinach each time I serve this. Give it a try, I promise you won't be disappointed!

Chicken Salad Sandwich

I have never been a fan of chicken salad, but this recipe changed my mind. The marinade for this recipe is fantastic just by its self. The chicken has an amazing flavor as you add the mayo and butter. When adding the cashews, make sure you do it just before you serve it. I love it on fresh croissants , but any bread will work. Serve with fresh fruit for a yummy summer meal!

Chocolate Chip Cookies

I think we need a treat, so here is a great recipe for chocolate chip cookies. I know it seems like there are 100's out there, but this one is really good. This recipe comes from Sandi Garrett, an amazing cook here in Colorado whom I admire with all my heart! This cookie can be warmed in the microwave the next day and it tastes just like it came out of the oven. Grab a gallon of milk and enjoy a warm cookie!

Barbecue Chicken Quesadillas

This recipe is AMAZING! I promise you if you try it just once you will make it over and over again. Our friend Perry got me hooked on these when he brought a slice over for a taste. Now I try to make these at least once a month. I know the recipe looks long and time consuming, but you marinate the chicken and combine the cream the night before. So the day of you just need to make the salsa and cook the chicken. I half the salsa recipe because it makes a ton and double the chicken for leftovers the next day. I hope you give this a try, it's worth the time!!

Rosemary Bread

I absolutely love the rosemary bread served at Macaroni Grill so you can imagine my excitement over finding this recipe so I can now enjoy this yummy bread in the comfort of my own home. This bread goes perfect with pasta but would be good with anything Italian!

Heavenly Brownies

What a yummy twist to the boring brownie! These were so good and worth the wait. You need to let these cool before you cut them, if not the fluff and frosting slides off the brownie. Enjoy and happy baking.

Chicken Spiedies and Potato Wedges

This treasure was found on http://www.mysisterskitchen2009.blogspot.com/ . When I saw it a couple of weeks ago I knew it was a recipe that needed to be tried. You do need to plan ahead, the chicken needs time to marinate, but only 30 minutes. I marinated mine for 3 hours because I like my meat a little strong. I cut my chicken into strips instead of chucks, thought it would be easier to eat. One last change, I toasted my buns on the griddle using a little olive oil, which really added to the sandwich. For veggies we had avocado, lettuce and tomatoes . This was a great alternative to hamburgers as we start the summer grilling season!
