Chinese Meatball Sliders

These sliders may look unassuming, but they are seriously tasty!  The meatballs are flavored with Hoisin Sauce, fresh ginger, and a small amount of scallions. Once they are baked they get coated with a hoisin/rice vinegar sauce making them extra juicy and flavorful.   Not only are these sliders delicious, they are SO easy to make! In fact, the first time we ate them my daughter Brynlee made them by herself.  She "gets" to make dinner for us every now and then and this is a recipe she picked out from one of her cookbooks.  I’ll admit that I didn't have high expectations for them but we were all pleasantly surprised by how good they were, and have made them a few times since.   To make these extra easy and fast, store-bought potato rolls can be used, but if you have a little extra time and/or want to save a little money, our Homemade Hamburger Bun's recipe is easily converted to make the perfect slider.  

BBQ Pulled Pork Sandwiches

We had these for dinner last night and let me just say, Yum!  This is my favorite BBQ sauce ever!  So much better than any store-bought brand I've gotten in the past.  The flavor was sweet and tangy with a little bit of a kick.  If you don't like spice just leave out the cayenne and you'll be set.  Serve on homemade hamburger buns , rolls, or whatever you like.  Just be sure to have some napkins handy!

Tender Grilled Pork Chops

We eat chicken a lot in our family.  That can get a little boring so I've been trying to break away from that.  Don't get me wrong, we'll still eat it, I would just like other options to mix things up.  Hence the last few dinner posts.  I tried out these pork chops last night and they were a hit with the whole family.  Even Brynlee liked them, and she seriously doesn't like much these days. (Side note:  I can imagine my Mom with a smug smile on her face as she reads this, because I was just about the worlds pickiest eater as a child.  What goes around comes around I guess).   Anyway, back to the Pork Chops, they turned out flavorful and juicy.  Perfect.  We'll be eating these again for sure!

Pork Carnitas

Originally I found a recipe for pork carnitas on Pinterest and decided to give it a try.  Upon taking it out of the oven I tasted the pork and was disappointed to find that it was pretty bland.  Even the juice didn't have a lot of flavor to it.  Not wanting to serve up a bland and boring dinner I decided to add my own touches and came up with a deliciously flavorful and moist combination that we all loved!  I even got the head nod and raised eyebrows from the Hubby .  That means he really liked them :).  This recipe is different from other pork recipes I have tried in the past because they are flavored with oranges and limes.  The result was a sweet, citrus flavor.  Add your favorite toppings and enjoy!.  Might I suggest though, that you squeeze some fresh lime and orange juice onto the meat before eating?  Hope you enjoy these as much as we did!

Pork Tacos with Fresh Mango Avocado Salsa

These tacos were so easy to make and SO tasty!  I loved the smoky taste of the Kalua Pork mixed with the sweet mango salsa.  Topped with a little sour cream (or Greek Yogurt), and wrapped in a tortilla (flour or corn), this was a great meal with little effort involved.

The Best Oven Baked Ribs

I have been married for over 8 years and have made ribs one time.  Ever.  It was yesterday.  I guess they were just unfamiliar to me and seemed like a daunting task.  Boy was I mistaken.  These were so easy!  A little planning is required as some things need to be done ahead of time, but as for the time I actually spent working with them, I'd say it was less than 15 minutes.  Doesn't get any easier than that.

Slow Cooker San Francisco Chops

People have asked me for a good pork chop recipe. I have never been a fan of pork chops, I feel they are the "dry" white meat, so I didn't have any to give! But I did go on the hunt for some and came across this one which is a keeper, Mike and Maddie loved it!
