Apple Fritter Pancakes

The kids and I decided that we needed breakfast for dinner night!  Mike has been out of town and with that, we get to eat very simple.  Plus we always try the weird recipes while he is gone so we don't get a lot of complaining :)!  This new recipe I found today and is a keeper for sure.  The pancake is dense, but I love the grated apples and cinnamon along with the caramel syrup on top.

Multigrain Bread

     I am always on the hunt for a good whole wheat bread recipe. My hunt paid off this time.  This recipe was  super soft and packed with good-for-you grains. It’s definitely going to be my new go-to wheat bread.  

Pumpkin Scones

Are you one of those people who thinks pumpkin baked goods should be reserved for Fall?  I am definitely not.  I'll eat pumpkin any time of the year.  Especially if it comes in the form of something sweet, like these scones.  I gotta say, these scones are different than any other scone I have ever made.  They are actually kind of fluffy and fall apart easily (as you can see from the picture).  Add in the white chocolate chips and the ginger glaze and then, oh my, you have got yourself one tasty breakfast!

Mongolian Beef

    One of the staple in our house is a flank steak.   By no means to we eat this all the time, but I do like to have one in the freezer for a quick meal.  Sometimes I will marinade the steak, freeze it in the marinade, then defrost another night and toss on the grill.     This recipe is another quick, easy and delicious meal for those busy weeknights.

Honey Lemon Orzo Salad

I had my first bite of this salad about 1 1/2 years ago and I was hooked.  It was different from any salad I had ever tasted before and I kept taking bite after bite wondering what it was about this salad that made me like it so much.  Was it the feta cheese? Possibly.  The grape tomatoes? Nope.  I would never eat those by themselves.  The honey, lemon, and olive oil dressing?  Definitely added to it, but it wasn't all.

Feta and Sun-Dried Tomato Turkey Burgers

I am in LOVE with these burgers!  They are so flavorful and unique.  Not to mention healthier than your average burger.  Aaron's first comment after biting into his burger was, "Wow!".  I'll take that :)  I served these burgers on homemade hamburger buns with Avocado Mayo.  All these components combined to make a truly gourmet burger.  Served with a side of sweet potato fries it was the perfect dinner.

Crockpot Chicken Tortilla Soup

Do you ever have one of those days that you just know you're not going to have much time to devote to dinner? But you still want to have a nice home-cooked meal?  I know I do.  The prep time on this soup is under 10 minutes.  Can't beat that!  It is great served with fresh lime juice, a dollop of sour cream, shredded cheese, guacamole, etc.

Toffee Bar Brownie Torte

So this little cake was more for me than for those eating it!  I found this on one of my favorite sites adn had to try my hand at it.  We were invited to a party last year so it gave me a perfect opportunity to have some fun! It took a couple of hours to make all the different layers, but it was such a fun cake to make and decorate.  Not only did it look pretty good it also tasted divine! Give it a try, worth the time for sure!!

Lemon Grilled Asparagus with Feta

For Christmas this year I received a Cuisinart Griddler Gourmet.  I couldn't wait to get cooking on it!  The first thing I made on it was Lemon and Garlic Grilled Chicken ( I have really missed that!) but this asparagus was the second item on the list. On the grill it only took 5 minutes to cook. It was a great twist on a standard vegetable.  We'll definitely be making this again!
