Chex Scotcheroos

I figured we needed an un-healthy treat to follow the healthy one.  Gotta keep things in balance you know?  Okay, okay, so we are way unbalanced on the sweets side.  At least these are Gluten-Free.  That counts for something, right?  Anyway, unhealthy or not, these little babies are downright delicious.  Chewy and chocolaty with a hint of butterscotch and peanut butter.  It was hard to only eat my share and then send the rest of the pan to work with Aaron.  Yes, it was painful but it needed to be done.  Otherwise I would have eaten WAY more than my share!  Now I'm thinking I need to make these again.  As soon as possible. Chex Scotcheroos from Yammies Gluten Freedom 6 cups Rice or Corn Chex (Gluten-free Rice Krispies would probably be good too) 1 cup light corn syrup 1 cup sugar 1 1/2 cups peanut butter 2 cups semi-sweet chocolate chips 2 cups butterscotch chips *(sometimes these have hidden gluten in the form of barley, so check the label and leave them out if you can'

Healthy Peanut Butter Oatmeal Cookies

I love finding healthy recipes for my kids that not only are healthy, but taste good as well.  What kid doesn't love cookies, so why not make it a healthy one.  Before the school year ended a great teacher passed this recipe on to me.  I am always looking for a healthy snack to make for my kids snack time at school or after school as well.  These little cookies have no sugar, except for the chocolate chips.  They are packed with oatmeal, nuts, bananas and I added a few currants just for extra healthiness.  My kids ate these up in just a few days time.  We took them on bike rides and hikes for extra energy, instead of store bought granola bars, love it!!  I think next time I might enjoy try adding a little shredded carrots as well!

Waffles of Insane Greatness

With a name like that you know they have to be good!  I had seen these around different blogs for a while but hadn't tried them since I didn't have a waffle iron. Crazy, right?  Well one Sunday morning my friend Aria came over for brunch, bringing along her waffle maker, and we tried these waffles out. Let me tell you, these waffles deserve the name. They were good enough to please my non- waffle loving husband, and to motivate us to buy a waffle iron so we could make them again and again!  The texture is just amazing. The outside is very crispy while still having a moist and slightly chewy center.  I loved these waffles!
