Biaggi's Bruschetta Appetizer

I was privileged to attend a fun 40th birthday party this past weekend for a good friend of mine. The party was held at a restaurant called Biaggi's. Before dinner was served they came around with some very tasty appetizers. They all were good, but the one I REALLY like was their Bruschetta. The tomato mixture was divine and they drizzles a balsamic glaze over the top! So of course I had to try and find the recipe and make it here at home, which I did! We had an Italian feast last night with this recipe as our appetizer. A lot of the ingredients you make ahead so when it com times to serve the dish it is very quick. For Pam and Summer I will be making this as one of our Thanksgiving appetizers, so don't make it! Give it a try, you won't be disappointed.

Fruit Smoothie

My kids love to have a smoothie when they come home from school. I love it as well for I add fresh baby spinach for extra vitamins and iron and ground flax seed for the omega 3's. I add yogurt for calcium, frozen fruit and orange juice. This smoothie has no sugar, honey, etc. It is only sweetened with the fruit I add. Get creative and make up your own recipe, but here is what I like to do! Enjoy.

Peppermint Marshmallows

Ever thought a marshmallow could elevate a steaming cup of hot cocoa from good to Heavenly? These do. Really. These are so delicious and addicting! I find myself making hot cocoa just so I can eat these. They are soft, pepperminty, and melt beautifully. Perfect on these chilly winter nights !

Pumpkin Pecan Chocolate Chunk Cookies with Maple Brown Butter Frosting

As you can see from the lack of postings this week, I have been a little busy. Sorry about that, but I will try to do better in the next couple of weeks. I have Pam coming for Thanksgiving so I am on the search for some new and exciting recipes to have while she is here, which I promise to share! But I do have a favorite recipe to share with you today! At this time of the year I love to cook with apples and pumpkin. My most favorite pumpkin cookie recipe I am giving to you today. The mix between the pumpkin, chocolate and maple frosting is to die for! If you can eat them warm, they are even better. Enjoy this pumpkin favorite!

German Chocolate Cake

When it comes to cake, German Chocolate is my favorite. When Mike and I were married, he told me he did not like coconut so a German Chocolate Cake was something he would not eat. Now this is the cake as requests for his birthday each year! Give it a try, it may become one of your favorites as well!

Mother's Oatmeal Bread and Honey Butter

This bread recipe has become a staple in the Wieda house. I have taught many people how to make bread with this simple recipe. If you are looking for a good food storage recipe, this is one to add to your pile. Most of the ingredients are stored on your shelves in your pantry, except the butter. I make a honey butter, which recipe I will include, that makes the warm bread irresistible. My kids always look forward to the next morning because I make french toast with the leftover bread! Everyone who has been given this recipe has loved it, I hope this will become one of your family favorites as well. Mother's Oatmeal Bread from My-Recipe.com Ingredients : 1 cup quick oats 2 cups boiling water 2 1/4 tsp yeast 1/4 cup warm water 1/2 cup honey 2 tsp salt 2 Tbsp butter, melted 4-5 cups flour Directions: In large bowl, add 2 cups boiling water to 1 cup oatmeal; let stand 1/2 hour. Taffy Apple Tartlets

With fall in the air, I love to make anything with apples. I made these fun little tartlets for a Halloween activity we had. These are fun to make, cute and best of all very tasty! When I makes these for my family we like to serve them hot out of the oven with a scoop of ice cream. This time I added mini chocolate chips to the top when I took them out of the oven for a twist!
