Malted Waffles

Okay, so I having been into breakfast food!  My little Jeremy LOVES waffles, so I decided to try and find a new and different recipe.  We love to make milk shakes and malts here at home so why not try a malted waffle.  I will have to say after just one bite,  these are now my new favorite waffle recipe.

Pecan Sticky Muffins

As many of you know, my kids love muffins.  So we have started a tradition that we always have Muffin Wednesday, much to Mike's dismay!  I try really hard to find new and exciting muffin recipes to wow the kids.  On my hunt last week, I found a great website with all kids of muffin recipes.

Classic Warm Goat Cheese Salad

So my new favorite thing to eat is goat cheese. So I have been searching high and low for recipes that use this ingredient. I had never tasted goat cheese, but was served a parmesan crusted chicken, topped with goat cheese and artichoke hearts at a restaurant and was in heaven!

Puffed French Toast

I'm finally back from my vacations and ready to get back into cooking!  I start you off with a not so healthy recipe, but a good one.  This is a fun breakfast to make on those special days, Father's Day, Christmas morning, Easter Brunch, etc.  

Sugar Cookie Cupcakes with Very Vanilla Frosting

For my sister Becky's wedding she chose to have a cupcake tower instead of the usual wedding cake.  The inspiration for this tower came from the book Hello Cupcake .  This is a really fun book with all sorts of ideas for decorating cupcakes.  Most of them are silly, but this cupcake tower turned out really pretty.  The tower in the book was a 4 tier tower and so she just did cupcakes for the whole thing with one giant cupcake on top.  However, I could only find a  three tier so we made a 6 inch cake to go on the top instead.  I'm not going to go into all the details that went into the external decorations ( unless somebody is really interested ), but rather I thought I'd share the cupcake and frosting recipe I used.

Double Cookie Dough Ice Cream

Who doesn't love cookie dough?  I for one am an ardent cookie dough lover.  I can't resist tasting it when making chocolate chip cookies, but always have a slight nagging worry about salmonella.  It hasn't been enough to stop me, but still...wouldn't it be better if you could have the goodness of cookie dough without the raw eggs? Enter, Double Cookie Dough Ice Cream.  I have to admit, this was never one of my favorite kinds to purchase, but it looked so delicious, and as we've already established, homemade is WAY better than store-bought,
