Grilled Honey Garlic Asian Chicken Kabobs

I love grilling, and these Kabobs are on of the best things to come off of the grill this Summer!  The chicken marinates in a delicious concoction that is sweet and spicy with a little kick of ginger and garlic.  Once grilled, they get basted with some more sauce boosting the flavor of these even more!   These are a family favorite! One of those "unicorn" meals that everyone loved and wanted more of!!  We love eating these with rice and broccoli, with some extra sweet and spicy sauce on the side and a little soy sauce for drizzling over the rice.  

Grilled California Chicken

Grilling chicken is probably my most favorite way to cook it, and this California Grilled chicken is packed full of flavor and loaded with toppings, making it a staple in my grilling rotation.   To start off with, chicken breasts are quickly marinated in a honey balsamic sauce and then grilled, making them juicy and flavorful.  The leftover marinade is simmered while they grill, reducing the vinegar to make a sweet and tangy sauce, perfect for drizzling.  Layering on thin slices of mozzarella cheese while the chicken is hot allows the cheese to get nice and melty.  Topped off with avocado slices, chopped tomatoes, and sliced basil makes this a hearty and delicious meal! 

Grilled Taco Lime Chicken

We had this chicken for dinner last night and loved it!  It is so versatile- in fact, between the three of us we ate it three different ways.  I had mine in a taco, Aaron had his with a salad, and Brynlee ate hers plain with some veggies on the side.  It was perfect with the usual taco toppings (lettuce, baby spinach, tomatoes, avocados, fresh lime juice,etc) and the Creamy Tomatillo Ranch  D ressing from the Cafe Rio Salads.  Taste aside, I loved that this chicken was so fast to prepare!  No marinating time required.  Just mix up the spices, rub them into the chicken, add a squeeze of lime and you're ready to grill.

Tender Grilled Pork Chops

We eat chicken a lot in our family.  That can get a little boring so I've been trying to break away from that.  Don't get me wrong, we'll still eat it, I would just like other options to mix things up.  Hence the last few dinner posts.  I tried out these pork chops last night and they were a hit with the whole family.  Even Brynlee liked them, and she seriously doesn't like much these days. (Side note:  I can imagine my Mom with a smug smile on her face as she reads this, because I was just about the worlds pickiest eater as a child.  What goes around comes around I guess).   Anyway, back to the Pork Chops, they turned out flavorful and juicy.  Perfect.  We'll be eating these again for sure!
