We had this chicken for dinner last night and loved it! It is so versatile- in fact, between the three of us we ate it three different ways. I had mine in a taco, Aaron had his with a salad, and Brynlee ate hers plain with some veggies on the side. It was perfect with the usual taco toppings (lettuce, baby spinach, tomatoes, avocados, fresh lime juice, etc) and the Creamy Tomatillo Ranch Dressing from the Cafe Rio Salads. Taste aside, I loved that this chicken was so fast to prepare! No marinating time required. Just mix up the spices, rub them into the chicken, add a squeeze of lime and you're ready to grill.

Ingredients:
1 tsp ground cumin
1 tsp kosher salt
1/4 tsp black pepper
1/2 tsp paprika
1/4 tsp table salt
1/4 tsp garlic powder
1 lime
3-4 chicken breasts
Directions:
Pre-heat indoor or outdoor grill to medium high heat. Mix the spices together and sprinkle over thawed chicken breasts. Rub in with fingers. Cut lime in half and squeeze generously over chicken. If desired, marinate for 1-5 hours. If not, just go ahead and throw it on the grill. Cook on each side for 5-6 minutes or until juices run clear. Let it rest for about 10 minutes before slicing to keep the juices in. Enjoy!
