Bird's Nest Cupcakes (and my favorite frosting ever!)

How perfect are these cupcakes for Spring/Easter celebrations! You could really make any kind of cake you want for these, but I chose to stick with chocolate (you know, since nests are brown-also I love chocolate).  The nest itself is made with the most divine chocolate frosting then topped with toasted coconut and Cadbury Mini Eggs.

Samoa Brownies

You can never have too many yummy brownie recipes!  If you love brownies and samoas, you will loves these.  Warm them up a little before you eat them, and the caramel will be nice and gooey.  Just the way I like it.

Coconut Cream Cake

A few weeks ago, we were invited to a get-together at a friends house.  Of course we offered to bring something, and of course I was secretly hoping to bring a dessert, but we got assigned to bring a fruit salad instead.  Was I disappointed?  A little, but that quickly vanished with the first bite of this delicious cake.  Now I'm glad that I didn't bring a dessert because I have a great new recipe to add to the collection!  Every bite is moist and coconutty.  Delicious!  I did make one small little change to the recipe and that was to toast the coconut, but it's great whichever way you choose to make it.

Cowboy Cookies

These cookies are one of my childhood favorites.  I clearly remember helping my mom bake these and anxiously waiting by the oven waiting for them to finish baking. Basically a chocolate chip cookie, oatmeal and coconut are added in for extra flavor and texture.  I love the taste of the coconut and the chewiness of the cookie!  The original recipe calls for shortening, but I am of the opinion that everything tastes better with butter so I used that instead and it was a good call.  We could not stop eating these!

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Hello Dolly Bars

These bars are one of my favorite treats! I first made a similar type recipe in high school. I was flipping through one of my Mom's Family Fun magazines and saw this recipe. Upon reviewing the list of ingredients I knew immediately that I would love these! I was right. Unfortunately, I lost the recipe. Fast forward a few years. I found this recipe in one of my favorite cookbooks and couldn't wait to try it again. It was just as delicious as I remembered. Even Aaron likes these, and he generally doesn't like anything with coconut in it.

German Chocolate Cake

When it comes to cake, German Chocolate is my favorite. When Mike and I were married, he told me he did not like coconut so a German Chocolate Cake was something he would not eat. Now this is the cake as requests for his birthday each year! Give it a try, it may become one of your favorites as well!
