These cookies are one of my childhood favorites. I clearly remember helping my mom bake these and anxiously waiting by the oven waiting for them to finish baking. Basically a chocolate chip cookie, oatmeal and coconut are added in for extra flavor and texture. I love the taste of the coconut and the chewiness of the cookie! The original recipe calls for shortening, but I am of the opinion that everything tastes better with butter so I used that instead and it was a good call. We could not stop eating these!
As a side note, when I called Brynlee in to get some cookies she stared at the cookies in confusion and said, "What? Are there cowboys in these?". Yeah, I have no idea why they are called Cowboy Cookies, but I can tell you that these are yummy!
Cowboy Cookies
from the Bingham Family Cookbook
1 cup white sugar
1 cup brown sugar
1 cup butter, room temp
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla
2 cups oatmeal
1 pkg. chocolate chips
1/2 cup coconut
Cream sugars and butter together. Add eggs and vanilla and mix until combined. Add in flour, baking soda, salt, and baking powder. Mix well then add in the chocolate chips, oatmeal, and coconut. Drop by spoonfuls onto cookie sheet (or roll into balls). Bake at 375 degrees for 7-9 minutes.
Note: I like my cookies a little crispy so I baked them the full 9 minutes. If you don't like them so toasty, take them out sooner.
