Tender Grilled Pork Chops

We eat chicken a lot in our family.  That can get a little boring so I've been trying to break away from that.  Don't get me wrong, we'll still eat it, I would just like other options to mix things up.  Hence the last few dinner posts.  I tried out these pork chops last night and they were a hit with the whole family.  Even Brynlee liked them, and she seriously doesn't like much these days. (Side note:  I can imagine my Mom with a smug smile on her face as she reads this, because I was just about the worlds pickiest eater as a child.  What goes around comes around I guess).  Anyway, back to the Pork Chops, they turned out flavorful and juicy.  Perfect.  We'll be eating these again for sure!





Tender Grilled Pork Chops

INGREDIENTS:
4 boneless pork loin chops
1/4 cup olive oil
2 1/2 tablespoons soy sauce
1 tsp paprika
1 tsp seasoned salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp coriander

DIRECTIONS:
Mix dry ingredients together.  Sprinkle over the pork chops and rub into both sides.  Place in a large ziplock bag.  Mix olive oil soy sauce together in a small bowl and pour over the pork. Move the pork chops around in the bag to make sure it is all covered.  Place in the fridge on a flat surface.  Let marinate for 3-8 hours, flipping halfway through.  Heat the grill to medium and grill the chops 6-8 minutes per side (depending on how thick they are) until they are no longer pink in the center or until a meat thermometer inserted into the center reaches 160 degrees.  Remove the chops from the grill and tent them with foil and allow them to rest for 5-7 minutes. Slice the chops in 1/4 to 3/8 inch slices across the grain and serve.

Note:  I made these on my Gourmet Griddler (indoor grill).  I grilled them on high for about 7 minutes total.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
