Waffles of Insane Greatness

With a name like that you know they have to be good!  I had seen these around different blogs for a while but hadn't tried them since I didn't have a waffle iron. Crazy, right?  Well one Sunday morning my friend Aria came over for brunch, bringing along her waffle maker, and we tried these waffles out. Let me tell you, these waffles deserve the name. They were good enough to please my non- waffle loving husband, and to motivate us to buy a waffle iron so we could make them again and again!  The texture is just amazing. The outside is very crispy while still having a moist and slightly chewy center.  I loved these waffles!








Waffles of Insane Greatness

Ingredients
3/4 cup all-purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/3 cup melted butter
1 egg
1 1/2 teaspoons sugar
3/4 teaspoon vanilla extract
Butter and syrup, for serving


Directions
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, butter, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes.

Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup. 


* I loved these with alternate toppings such as Nutella, whipped cream, fresh fruit, etc.

Scrumptious Sugar Cookies

Sugar cookies are one of my favorite things to make with the kids! It's tradition to make them for a few different Holidays including Valentine's Day. While decorating is the usually the main purpose in making these, over the years I have tweaked the cookie recipe and frosting to make them absolutely scrumptious as well! So much yummier that buying a store-bought mix and canned frosting.  I would even be so bold as to say I think they are every bit as good, if not better, than Swig and Crumble! Give them a try and see if you agree.   My Scrumptious Sugar Cookie Frosting is an ultra creamy, cream cheese frosting with a few extra additions that put it over the top!
