Lemon Grilled Asparagus with Feta


For Christmas this year I received a Cuisinart Griddler Gourmet.  I couldn't wait to get cooking on it!  The first thing I made on it was Lemon and Garlic Grilled Chicken ( I have really missed that!) but this asparagus was the second item on the list. On the grill it only took 5 minutes to cook. It was a great twist on a standard vegetable.  We'll definitely be making this again!  


Note:  This recipe can be also be used with fresh green beans.   If you don't have an indoor grill you could easily make this recipe by roasting the asparagus/ green beans in the oven using this method.   Once it is tender proceed with the rest of the directions.  

Lemon Grilled Asparagus with Feta
slightly modified from Griddler Gourmet

Makes 4 servings

1 pound green beans or asparagus
1 1/2  tsp extra virgin olive oil
1/4  tsp kosher salt
1 TBSP fresh lemon juice
1/4  tsp basil
1/8  tsp freshly ground black pepper
1/4  cup crumbled feta cheese

Insert the plates on their grill side.

Preheat the Griddler Gourmet  to high with the unit closed.  Remove tips and tops from green beans.  If using asparagus, snap the bottoms off.  When the Griddler is hot, arrange half the veggies on the bottom grill plate.  Close and grill for 5-6 minutes.  Using a pair of heatproof tongs for nonstick cookware, remove the veggies and transfer to a bowl.  Sprinkle with the salt, lemon juice, basil and pepper; toss to coat.  Arrange veggies in a shallow bowl and sprinkle with crumbled feta cheese.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
