These tacos were so easy to make and SO tasty! I loved the smoky taste of the Kalua Pork mixed with the sweet mango salsa. Topped with a little sour cream (or Greek Yogurt), and wrapped in a tortilla (flour or corn), this was a great meal with little effort involved.
Kalua Pork
slightly modified from Fav Family Recipes
3-4 pound pork roast
1-2 tablespoons Kosher salt
1/3 c. liquid smoke
1 c. cup water
Place roast in crockpot. Rub with Kosher salt, and pour the liquid smoke over the roast. Add water around the sides of the roast. Cover and cook on low for 8-10 hours or until it will easily shred into juices (do not drain).

*Note: This recipe made much more than my little family of 3 needed, so I divided the leftovers (with the juice) into Ziplock bags and put them in the freezer. It froze great, but did need a little liquid added to it when I warmed it up in the microwave.
Fresh Mango Avocado Salsa
1 ripened mango (cubed)
2 avocados (cubed)
juice of one lime
1/4 cup chopped cilantro
2 TBSP sugar
*Note: My mango wasn't as sweet as I would have liked so I added the sugar, but if your mango is sweet and juicy you may not need to add any sugar.
