Chicken Salad Sandwiches with Fruit and Almonds

Chicken salad sandwiches seem to be the go to item for baby and bridal showers.  I wanted to make some for the baby shower, but had a dillema.   While I like the main components in the salad, I really do not like the taste of raw onions and celery.  However, I still wanted some crunch and flavor in the salad.
I looked several different places for recipes matching these criteria and came up empty handed.  So, I decided to make up my own recipe.  These sandwiches turned out great with lots of color, flavor, and crunchiness.  Served on buttermilk rolls, they were just what I was aiming for.  Several people commented on them and wanted the recipe, and more than one person went back for seconds.  Try them out and you'll see why!


Chicken Salad

*makes about 16 sandwiches

4 large chicken breasts ( cooked and shredded)
1 2/3 cup mayo
2/3 cup miracle whip
onion powder
garlic salt
1 1/2 cups diced green apples
1 1/2 cups red grapes, sliced in half
1 to 1 1/2 cups sliced almonds

Combine mayo and miracle whip in a large bowl.  Add onion powder and garlic salt to taste.  Gently stir in chicken, apples, grapes, almonds.  Serve on rolls of your choice.  Enjoy!

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
