Lemon and Garlic Grilled Chicken

Lemon and garlic make a wonderful combination and turn a plain chicken breast into something mouthwatering. A bonus to this chicken is it can be used in other dishes as well. Stay tuned for another yummy recipe which incorporates this delicious chicken!







Lemon and Garlic Grilled Chicken

Juice of 1 lemon, approximately 3 TBSP
3 TBSP olive oil
1 tsp minced garlic, about 2 medium cloves
1 tsp salt
1/4 tsp pepper
1/2 tsp dried oregano
1 lb chicken breasts, pounded to an even width

Combine all marinade ingredients. Place chicken in a ziploc bag and pour the marinade over chicken. Seal bag and place in fridge overnight. Grill (or cook in frying pan). Seve with sides of your choice or cut into bite sized pieces and add to desired recipe. Note: If you cut your chicken into smaller, bite-sized pieces and then marinate it, you can get away with only letting it marinate for 5 or 6 hours instead of overnight.

Tip: Double the marinade and chicken and grill it all up and freeze the extras to use later.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
