Apple Pie Crumble Bars


Like many of you that know me, I hate to make the same thing twice! So I had a preschool picnic to go to and was asked to bring a dessert. I have had this recipe for a while but was waiting until the fall to give it a try. I figured the end of August was close enough so I made them this past weekend. They were really great. Tasted just like fresh apple pie, but easy to eat bars. I will make these again in the fall, but would eat them warm with ice cream!! Enjoy.




Apple Pie Crumble Barsfrom Crepes of Wrath

4 cups all-purpose flour
1/2 tsp salt
1 1/2 cups sugar
1/2 cup + 1 tablespoon brown sugar, divided
1 1/2 cups butter, softened
6 cups granny smith (or a variety of your choice) apples, skinned and diced (about 5 apples, but I only had 4 and they still turned out well)
1/2 a lemon
1 tsp cinnamon
1/2 tsp nutmeg

1. Take the butter out of the fridge to soften (do NOT melt) on the counter as you peel and dice up the apples into very small cubes. Squirt with the juice of half a lemon and set aside.

2. Combine the flour, salt, white sugar and 1/2 cup brown sugar in a bowl.

3. Cut the butter into the dry ingredients. The butter should not be melted. What we’re going for here are crumbs (but moist crumbs). You can use a fork or your hands to do this.

4. Take 1 cup of the crumb mixture and mix it with the apples. Add the cinnamon, 1 tablespoon brown sugar, and nutmeg and set aside.

5. Preheat the oven to 350 F and grease and flour a 9×13 baking pan, or line it with tinfoil. Take 1/2 of your remaining crumb mixture and press it into the bottom of the pan. Bake for 10 minutes.

6. Remove the crust from the oven, pour in the apple mixture and top with last of the crumbs. Put it back in the oven for another 45-55 minutes, or until the top is a beautiful golden brown. Cut into bars after they’ve completely cooled. I put mine in the fridge and they firmed up very nicely, but you can eat them warm as well (maybe with some ice cream).

Kirsti and I decided we need to get back in the habit of sharing our favorite recipes by sharing at least one a month so here you go:   I’m starting off with these scrumptious strawberry muffins. Extra large and fluffy, these muffins are bursting with strawberry bits and topped with the most delicious strawberry glaze. If you end up with extra glaze, go ahead and drizzle some extra.  No judgement here :)   Even if you already love the previous strawberry muffins on our blog, you need to try these- they are the only ones I'll be making from here on out.  They're that good!

Scrumptious Sugar Cookies

Sugar cookies are one of my favorite things to make with the kids! It's tradition to make them for a few different Holidays including Valentine's Day. While decorating is the usually the main purpose in making these, over the years I have tweaked the cookie recipe and frosting to make them absolutely scrumptious as well! So much yummier that buying a store-bought mix and canned frosting.  I would even be so bold as to say I think they are every bit as good, if not better, than Swig and Crumble! Give them a try and see if you agree.   My Scrumptious Sugar Cookie Frosting is an ultra creamy, cream cheese frosting with a few extra additions that put it over the top! Sour Cream adds to the creaminess and takes the sweetness down a notch.  The frosting is still plenty sweet but not sickeningly so.  Butter Vanilla Emulsion is my other secret weapon that really elevates the flavor of this frosting!
