Creamy Cinnamon Vanilla Steel Cut Oats (Instant Pot)

Creamy Cinnamon Vanilla Steel cut oats are one of my favorite breakfasts.  I love the texture- the chewiness is just right for me, and the creaminess of the oats just isn't quite matched by the other types of oatmeal.  With 5 g of protein and fiber per serving they are so good for you too! The only drawback is that they can be a little high maintenance if you are making them on the stove, requiring constant stirring for several minutes.   Let's be honest, most mornings that just isn't something I have time to do.  I'm trying to get a workout in, get the kids off to school, get showered, etc.  That is why I love making these oats in the Instant Pot!  For this recipe, you literally just put everything into the pot and walk away.  Go do what you need to do and come back to it later.   Total cook time on this is probably about 20 min.  I've never actually timed it exactly, but that is the beauty of these oats.  It's ok if you don't get to them right away. The Instant Pot will keep them nice and warm for you till you're ready to dish up a bowl.  Granted, they will thicken up the longer you leave them, but just adding some more milk and giving them a stir will do the trick. This oatmeal is extremely versatile and is delicious with a variety of fruit, nuts, and sweeteners.  Oftentimes, I'll just sweeten it with a vanilla protein shake since I'm usually drinking one anyway first thing in the morning for a healthier version, but brown sugar or maple syrup are perfect with it.  

A few notes:  

I've written this recipe the way I prefer to make it,r  but keep in mind that really any type of milk (dairy or not) can be used.  Also, these oats warm up beautifully so don't be afraid to make an entire batch.  I'll either save them in Tupperware in the fridge or freeze them in muffin tins and transfer them to a freezer safe bag.  Add a few TBSP of water, microwave for 2-3 min, stir them up and they are as good as new.   


Creamy Cinnamon Vanilla Steel Cut Oats

makes 4 servings

Ingredients:

1 cup Steel Cut Oats

1 1/2 cups water

1 1/2 cups whole milk

1 tsp cinnamon

2 tsp vanilla

dash of salt


Instructions:

Combine all ingredients in the Instant Pot.  Close the lid and move the top knob to the Seal position.  Push Manual and move the #'s up or down to get to 3 min.  The Instant Pot will start counting down from 3 once it comes to pressure.  After it gets to 0, allow the oats to sit in the pot for at least another 12 min on warm.  Release pressure by carefully turning the knob to the vent position.  Once all the pressure is released, take the lid off and dish up the oats.  Serve with your choice of sweetener and/or fruit.  Enjoy!

Royal Icing for Sugar Cookies

While I love my Scrumptious Sugar Cookie frosting , Royal Icing is the way to go for decorated cookies that harden enough to stack and package. It definitely takes more time and patience, but the end result is so satisfying! You can make such fun cookies without having to worry about the frosting coming off.  Royal Icing can get super hard, and while this is perfect for building Gingerbread Houses, it’s not so great when you want to actually eat the cookie. Not to worry though- adding in a little corn syrup helps the icing dry firm without being overly hard.  I also like to add in my favorite butter vanilla emulsion to make the icing extra yummy, cause at the end of the day it’s not enough to just look pretty!  There are a few different ways to make Royal Icing. My favorite method is using Meringue Powder. If you can’t find this or don’t want to buy it, you can use egg whites instead. Brown Butter Caramel Snickerdoodles

If you try one new cookie recipe this Fall, let it be this one!! I'm not kidding when I say that this is  one of the best cookies I've ever made.  They've already received rave reviews and comments such as, "Amazing!", and "Incredible!"  These are not your average snickerdoodle, not that I have anything against the traditional ones, they are made with browned butter and extra brown sugar for a rich caramel taste.  But wait, it also has a caramel center! And of course that classic chewy texture with a cinnamon/sugar coating.  I could eat these every single day. They are SO GOOD you guys!
