Hot Cocoa Bombs

Hot Cocoa bombs are so delicious and so much fun!  My kids always get excited when I make these, much more so than with just regular hot chocolate because they are so fun to watch as the "bomb" goes off.  Picture chocolate melting and the marshmallows and other fillings popping up to the top.  

These are really simple to make, and totally customizable, but you will need a mold.  I used a silicone mold, but I have seen plastic ones that make the process look even easier!  Don't have a mold? Try using the little dixie cups instead! Make it the same way as the bombs but just pour in melted chocolate to seal off the top.

I love the peppermint/chocolate combo so much!  To me, it's the must have flavor of the season.  The fantastic thing about Hot Chocolate Bombs though, is that you can make them any way you want to!  Use your choice of chocolate for the shell and fill with any type of hot chocolate.  From there use whatever fillings your heart desires- as long as you can get the top on :).  Think marshmallows, crushed candycanes, sprinkles, m&m's, caramel bits, peanut butter, toffee chips, cinnamon, etc.  

Make these for an extra special treat for a special occasion like Christmas Eve, or just any old time.  Smiles guaranteed! 



Hot Cocoa Bombs
makes 6 bombs

2 Sphere molds  like these  or these or 6 dixie cups
1 cup chocolate chips, any type
* I used Ghiradelli Milk Chocolate and Guittard Vanilla 
12 TBSP Hot Chocolate mix
Toppings of choice
* I used 4 crushed up candy canes and some dehydrated marshmallows.

Place molds side by side on a sheet pan.  Melt chocolate chips in the microwave for 1 minute.  Stir then put back in microwave for another 30 seconds.  Stir will until all chocolate is melted.  If needed microwave for an additional 15 seconds.  

Spoon about 2 TBSP of chocolate into each mold.  Using the back of a spoon, gently push the chocolate up the sides of the mold, paying special attention to the top rim.  Try to coat it as evenly as possible.  If needed, add a bit more chocolate.  The mold shouldn't be showing through at all.  Once all the molds are coated with chocolate, transfer the pan to the freezer for about 15 min or until chocolate is solid.  

Meanwhile, heat up a small pan over low heat.  

Take the pan with the chocolates out of the freezer.  Check to make sure there aren't any thin spots, and gently push the chocolate out of the molds.  If there are thin spots, first add a bit more chocolate and wait for it to firm up, placing back in the freezer if needed.  

Now we get to fill them!  To half of the chocolates, fill with about 2 TBSP of hot chocolate powder and desired toppings.  You can fill them up more that I did here.  Pretty much as long as they aren't spilling over the edges and you can get the top on you're good.  


 Once that step is complete, gently pick up one of the empty chocolates (you may want to use gloves for this step if your hands are warm enough to melt the chocolate.  

Take the pan off of the heat and very gently rub the top of the chocolate in a circular motion until melted.  Immediately place onto the top of one of the filled chocolates.  Use your finger to smooth out any rough spots.  If needed, add a bit more melted chocolate to seal.  

You can stop there, or if you want to get a little fancy, melt a little more chocolate and drizzle it over the bombs. Finally, add a finishing touch of crushed candies, sprinkles, etc.  

Place Hot Chocolate Bomb in a cup and pour hot milk over top.  Wait a few seconds for your bomb to "explode" and sir well.  Enjoy!

Does this dessert sound familiar to you?  I originally posted it last Summer, but didn't have a picture at the time.  I'm excited to be able to post this picture now so you can see how yummy it looks!  I first had this pudding at a BBQ last Summer.  One bite and I was hooked.  This fabulous pudding sits on top of a layer of bananas and is sandwiched between two delicious cookies. Royal Icing for Sugar Cookies

While I love my Scrumptious Sugar Cookie frosting , Royal Icing is the way to go for decorated cookies that harden enough to stack and package. It definitely takes more time and patience, but the end result is so satisfying! You can make such fun cookies without having to worry about the frosting coming off.  Royal Icing can get super hard, and while this is perfect for building Gingerbread Houses, it’s not so great when you want to actually eat the cookie. Not to worry though- adding in a little corn syrup helps the icing dry firm without being overly hard.  I also like to add in my favorite butter vanilla emulsion to make the icing extra yummy, cause at the end of the day it’s not enough to just look pretty!  There are a few different ways to make Royal Icing. My favorite method is using Meringue Powder. If you can’t find this or don’t want to buy it, you can use egg whites instead. Brown Butter Caramel Snickerdoodles

If you try one new cookie recipe this Fall, let it be this one!! I'm not kidding when I say that this is  one of the best cookies I've ever made.  They've already received rave reviews and comments such as, "Amazing!", and "Incredible!"  These are not your average snickerdoodle, not that I have anything against the traditional ones, they are made with browned butter and extra brown sugar for a rich caramel taste.  But wait, it also has a caramel center! And of course that classic chewy texture with a cinnamon/sugar coating.  I could eat these every single day. They are SO GOOD you guys!
