Dulce de Leche Banana Pudding Jars

You know how some ingredients were just made to go together? Bananas and Dulce de Leche are one of those; and when Nilla Wafer's, creamy pudding, and whipped cream are added to the mix it is just on another level altogether! Not only is the Dulce de Leche found on the bottom of the jars, it's also mixed into the pudding and drizzled on top, so you get caramel banana bliss in every bite! 

If you're not familiar with Dulce de Leche, it's a sweet milk caramel made from Sweetened Condensed Milk.  It is divine as a dip for apples and bananas, or as a topping on ice cream, baked goods, or pudding- wink wink.  

I think these look so cute and fancy in these little half-pint jars, but you don't have to make it this way.  No jars? No problem. You can layer them in small bowls, or just combine them all in an 8X8 inch pan. Will it look as pretty? Probably not, but hey, it will still taste amazing! 

These are best if made a day ahead of time to allow the banana flavor to really seep into the pudding, but can definitely be eaten right away.  Still so yummy, just not as banana-y.  

Dulce de Leche Banana Pudding Jars

Makes 8- 1 cup servings 

Ingredients:

8 half-pint jars 

14 oz  Dulce de Leche* 

2 bananas, sliced

Nilla Wafers, about 32

2 cups heavy whipping cream

1/4 cup powdered sugar

2 tsp vanilla

1/2 pkg (5.3 oz) French Vanilla pudding mix 

1 cup milk

4 oz cream cheese, room temperature

Directions:

In a medium bowl, stir pudding mix and milk together.  Place in the fridge for 5 min or until set.  Meanwhile, in a large bowl, mix cream cheese and 1/2 cup Dulce de Leche together until smooth.  In a separate bowl, whip heavy whipping cream until stiff peaks form.  Add in powdered sugar and vanilla and briefly whip again to combine.  

Gently fold the pudding mixture and half of the whipped cream (about 2 cups) into the cream cheese mixture until no streaks remain. Place remaining whipped cream in the fridge until ready to use. 

Place 3 Nilla Wafer cookies in the bottom of each jar. Pour or spoon 2 TBSP of Dulce de Leche over the crackers.  You may need to use a small spoon to spread it around.  Warming it up a bit will help it spread easier.  

Add 3-4 banana slices on top, arranging in a circle.  

Divide the pudding mixture evenly between the jars. 

If making a day ahead of time, place lids on jars and refrigerate.

Just before serving, top with swirls of whipped cream.  If desired, place another Nilla Wafer and banana slice on top of the whipped cream then finish with a drizzle of Dulce de Leche.

Dulce de Leche

This can be purchased already made at the grocery store or you can make it yourself.  All you need is a can of Sweetened Condensed milk and vanilla (optional).  

Here are a few different ways to make your own!

Instant Pot (my fav): Pour 1 14 oz can of sweetened condensed milk into a pint-sized jar and screw lid on tightly.  Place on trivet, in instant pot.  Add water until it comes about half-way up the jar.  Place lid on instant pot and push the manual button to adjust the cook time to 50 min.  Make sure knob on top is turned to the Seal position.  When the time is done, turn knob to vent to release pressure then carefully remove lid.  Using tongs, remove jar and set on the counter to cool for about 30 min.  Once it's cooled enough to open, take off the lid and stir in 1 tsp of vanilla.  Refrigerate until ready to use.

Crock Pot: Pour 1 can of sweetened condensed milk into half-pint jar.  Twist lid on tightly.  Lay jar on it's side and cover with water.  Cook on low for 8 hours then remove.  Cool for a few minutes then remove lid and stir in 1 tsp vanilla extract. 

Stove Top: In a large pot, place can of sweetened condensed milk (unopened), and cover with water (a few inches over the top.  Bring water to a simmer.  Continue simmering, checking water level and adding more as needed, for about 3 hours.  Let can cool to room temperature before opening.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
