IHOP French Toast with Coconut Syrup


This has to be the best breakfast recipe find this year. This gem comes from one of my favorite blogs.  When I first saw "coconut syrup" I was a little skeptical, but was I wrong. Last week I mixed it up by using Mexican vanilla instead of cocnut extract, but hands down the coconut syrup is the best! The flour you add to the french toast recipe really does the trick. I like to use Texas Toast for my french toast, but the Sisters like to use italian bread, so do what makes you happy. Give this recipe a try, I promise you won't be disappointed!!

IHOP Freanch Toast

2 eggs
½ c. milk
1/8 tsp salt
1 tsp vanilla
3 T. flour
6 slices of thick sliced French bread

First beat eggs, then add remaining ingredients with electric mixer. Dip both sides of bread and place in hot buttered pan, or griddle. Flip over when browned. Serve with Coconut Syrup.

Coconut Syrup

1/2 cup butter
3/4 c. buttermilk
1 c. sugar
1/2 tsp baking soda
1 tsp coconut extract

Place butter, buttermilk and sugar in a large pot (when you add the baking soda, it will bubble up!!). Then turn stove on medium and stir until butter melts and sugar dissolves. Bring to a boil and boil one minute. Remove from heat and add soda and flavoring. It will bubble up; just continue to stir and give it a few minutes for the 'fizz' to reduce before serving.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
