Pico de Gallo


As the summer comes to an end I leave you with one of my favorite summer treats. I have had this recipe for over 10 years and love it. It uses fresh tomatoes, peppers, cilantro and banana peppers. My kids love to eat this as an after school snack, with chips or cheese quesidillas. It makes me happy to see my kids eat fresh veggies out of the garden and enjoy it! Give it a try, you may never go back to the jar again.





Pico de Gallo
1 bunch green onions
1 whole red pepper, diced
1 whole green pepper, diced
1 whole yellow pepper diced
4 whole banana peppers (found in a jar in the olive section of your grocery store)
2 Tbsp jalapeno peppers, diced
8 whole tomatoes, diced
1/2 bunch cilantro
1 Tbsp lime juice
2 Tbsp lemon juice
1-2 Tbsp salt (add to your taste, the longer it sits the salter it gets)
Mix everything in a food processor, except salt. Add salt slowly until flavor is what you want. Cover, and let sit in the refrigerator for 2-3 hours. Stir occasionally.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
