These are one of my favorite "sandwiches" for lunch! It's a nice twist to the normal boring, sandwich! If you are looking for a healthy, yet tasty lunch give these a try. This is the recipe I use the cilantro mayo with!
Turkey Roll -Ups
adapted from The South Beach Diet Cookbook
Herb Roasted Turkey (Found @ Sams Club) or any lunchmeat you enjoy
Cilantro Mayo
Boston lettuce leaves
Avocado slices
Red Pepper strips
Sprouts
Sliced Tomatoes
Place a turkey on the lettuce leaf spread with cilantro mayo. Add you choice of fresh veggies. Fold and enjoy!
