Chocolate Orange Swirl Muffins

My kids know that on Sunday mornings I make muffins for breakfast. This Sunday I was getting bored with my same old recipes so hunting I did go! I found this little treasure at Mels Kitchen. I added chopped nuts and a sprinkle of brown sugar on top, but other than that I thought the recipe was perfect! If your low on breakfast goodies to impress your family, give this one a try.

*Makes about 12 muffins
1 ½ cups all purpose flour
½ cup sugar
2 teaspoons baking powder
¼ teaspoon salt
1 egg
½ cup canola oil or melted butter
½ cup buttermilk
½ cup orange juice
1 teaspoon vanilla extract
Zest of one medium orange (about 1 tablespoon)
2 tablespoons cocoa powder
½ cup semisweet chocolate chips, regular or mini-sized

Preheat oven to 325 degrees (for dark, nonstick pans) or 350 degrees for regular muffin tins. Line tins with cupcake liners or spray with cooking spray.
In a large bowl, sift together the flour, sugar, baking powder and salt.

In a separate medium-size bowl beat together the egg, oil or butter, buttermilk, orange juice, vailla and orange zest. Pour the wet mixture over the dry and mix together just until moistened. Don’t over mix! You may even see some small dry spots - as long as the mixture is evenly moistened without being overmixed, it will be fine.
Into two bowls, divide the batter in half. Sift the cocoa powder in to one of the bowls and fold in half of the chocolate chips. Fold the remaining chocolate chips into the other "white" bowl of batter.

Drop spoonfuls of the batter into the prepared muffin tins, alternating the orange and chocolate batters. Fill the cups 2/3 full. Bake for 13-15 minutes at 350 or 17-18 minutes at 325 until a toothpick inserted in the center comes out clean. Remove from the oven and cool the muffins for five minutes in the tins.

Remove the muffins to a wire rack to cool completely.

Bakery style Strawberry Muffins

New recipe! Can you even believe it?! Kirsti and I decided we need to get back in the habit of sharing our favorite recipes by sharing at least one a month so here you go:   I’m starting off with these scrumptious strawberry muffins. Extra large and fluffy, these muffins are bursting with strawberry bits and topped with the most delicious strawberry glaze. If you end up with extra glaze, go ahead and drizzle some extra.  No judgement here :)   Even if you already love the previous strawberry muffins on our blog, you need to try these- they are the only ones I'll be making from here on out.  They're that good!

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate.

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
