Loaded Peanut Butter Cup Chocolate Cookies

These cookies are way over the top!  A soft chocolate peanut butter cookie, loaded with Reeses Pieces, Reeses Peanut Butter Cups, peanut butter chips, and chocolate chips. Yum!   I brought these to a BBQ and they were devoured by kids and adults alike.  If you like peanut butter and chocolate you must try these!  Betcha can't eat just one.  


Loaded Peanut Butter Cup Chocolate Cookies

Makes about 36 cookies.
1 cup butter, softened
3/4 cup peanut butter
3/4 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/3 cups all-purpose flour
1/3 cup cocoa powder
1 teaspoon baking soda
1 cup semisweet chocolate chips
1 cup peanut butter chips
1 cup Reese’s Pieces
1 package mini Reese’s peanut butter cups, cut into halves and frozen ( I found some regular size Reese's on sale so I used those instead.  You can either half or quarter them.  I recommend gently cutting them in half before freezing them ).
Preheat oven to 350 degrees.
In a large bowl or stand mixer, cream together the butter, peanut butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, cocoa, and baking soda; stir into the peanut butter mixture. Mix in the chocolate chips, peanut butter chips, and Reese’s Pieces (this is best done by hand so the shells of the Reese’s Pieces don’t get broken).
Drop by tablespoonfuls onto cookie sheets lined with parchment paper or silpat liner. Push one peanut butter cup half into the center of each ball of dough. Bake for 8 to 10 minutes (I baked mine about 11 minutes). Let cool for 1 or 2 minutes on sheet before removing, or they will fall apart.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
