Texas Caviar

This delicious dip is appropriately named since the first time I had this dip was indeed in Texas. I think this dip is perfect for summer!  It is served cold and it filled with good for you ingredients like black eye peas, shoe-peg corn, roma tomatoes, and avocados. You'll want to plan ahead with this dip because, while it comes together quickly, it is best after it has had time to marinate and chill in the fridge.  Enjoy!

Texas Caviar
from The Sister's Cafe
3 cans black eye peas, drained and rinsed
2 cans shoepeg corn, drained
3-4 Roma tomatoes, chopped
avocadoschunked
1 bunch of cilantro, chopped
1/2 sweet onion, minced
juice of 2 limes
Good Seasonings Italian Dressing packet, prepared
salt to taste
Combine all ingredients in large bowl, adding avocado last. (I like to add a few squirts of Tabasco sauce as well.) Pour about 1/2 the dressing into mixture and stir gently. Add as much dressing as desired. I usually use a little more than half. Serve with tortilla chips. Enjoy!

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
