Sun Dried Tomato and Bacon Chicken

My sister in law Summer was the one to find this great recipe.  Simple, quick and flavorful, my kind of meal.  Like my brother Eric, Mike really liked this as well.  Summer did suggest marinating the chicken in the dressing for a while before cooking it, I would agree.
 I forgot to do that step so mine was only in the marinate for an hour, but the longer the better.  Thanks Summer for a great recipe!



Sun-dried Tomato and Bacon Chicken 

Ingredients :
2 slices (1/2 ounce) bacon
1/4 cup sun-dried tomato vinaigrette dressing (I used 1/2 -3/4 cup)
4 (1 pound) boneless skinless chicken breast halves
2 tomatoes, chopped
About 1/4 Cup sun-dried tomatoes chopped up.
1 Tablespoon chopped fresh basil or 1 teaspoon dried basil
2 Tablespoons Parmesan cheese

Directions:

Cook bacon in a large pan until crisp and drain on paper towel.

Add chicken to large pan and brown on each side for about 2 minutes on regular heat.

Pour sun-dried tomato dressing over chicken and sprinkle with basil. Continue to cook chicken for 8 minutes or until done.

Remove chicken; place on serving dish and keep warm. Save the remaining dressing in the pan and add the chopped tomatoes to the pan cooking until heated through. Stir in the bacon.

Pour tomato mixture onto chicken and top with Parmesan cheese.

6*If you have time marinate your chicken breasts for 4-6 hours in the sun-dried tomato dressing. This will let the flavors infuse the chicken even more.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
