Bow-Tie Lasagna

So here is another quick and easy recipe for those busy weekday nights.  I added a few of my own special touches, like always, but the main recipe is the same.  I made a very simple spaghetti sauce, but feel free to use your favorite canned spaghetti sauce.  I added some different cheese to mine, as we McCain's love our cheese!
Even Mike loved this with all the cheese in it, miracles never cease!
Serve this with a salad or veggie of your choice and a quick and healthy meal is ready in minutes.

Bow-Tie Lasagna
adapted from http://thepioneerwoman.com

  • 1 pound Ground Chuck
  • 5 cups Bow Tie Noodles (1 box)
  • 3 cups Spaghetti Sauce (or Pizza Sauce, Whatever You Prefer)
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoons Garlic Powder
  • 1/2 teaspoon Italian Seasoning (or More, Make It To Your Taste)
  • ½ cups Mozzarella Cheese
  • 1/4 Mizithra  or Asiago Cheese
  • 3-4 Tbsp Parmesan Romano Cheese
  • 3/4 cups Sour Cream

Fry ground chuck in small pan. Meanwhile, cook noodles according to package directions.
After noodles are cooked, drain and drizzle with olive oil. Mix in your spaghetti sauce.
Add your fried hamburger, seasonings, cheeses, and sour cream. Fold together and allow it all to combine and melt together, over low heat, for about 5 minutes, or until cheese is melted.

Asian Chicken Lettuce Wraps

I am always looking for fast, easy and nutritious meals for my busy weeknight meals.  These wraps have become one of our family favorites.  We serve these with a side of wontons or potstickers to complete the meal. The filling can be made ahead of time and reheated if your day is extra busy. Bibb lettuce is our favorite, but feel free to use iceberg or even romaine for this dish. I hope you enjoy these as much as we do!

Chicken Salad Sandwiches with Fruit and Almonds

Chicken salad sandwiches seem to be the go to item for baby and bridal showers.  I wanted to make some for the baby shower, but had a dillema.   While I like the main components in the salad, I really do not like the taste of raw onions and celery.  However, I still wanted some crunch and flavor in the salad.

Best Ever Chocolate Chip Cookies

The name says it all. These cookies are my (and my husband's) favorite cookies! Not just your average chocolate chip cookies, these babies come out of the oven with a slightly crisp outside while still remaining soft on the inside. Use Ghiradelli Milk Chocolate Chips and you will have achieved chocolate chip cookie perfection!
