Peach Salsa

I have been waiting all year long for peaches to come into season so I could make this salsa!  We love it.  When you first take a bite you taste the sweet peaches, but it is quickly followed up by the spiciness of the peppers.  As a side note, we picked these peaches off my parent's trees, which makes them that much sweeter.

Try eating this salsa with Hint of Lime Tostitos! So good!

I've written this with canning instructions since that's what I usually do, but it's not necessary.

Peach Salsa
modified from allrecipes.com

*makes about 3 pints

Ingredients:

4 cups fresh peaches - peeled, pitted and chopped
1/2 cup chopped onion
1/2 cup chopped red bell pepper
4 jalapeno peppers, minced
1/4 cup chopped fresh cilantro
3 cloves garlic, minced
1 1/2 teaspoons ground cumin
1/4 cup distilled white vinegar
Zest and Juice of 1 large lime
1/2  package light fruit pectin crystals
3 cups white sugar

canning jars and lids or a large container

Directions

Sterilize jars and lids. I use my dishwasher for this by running a small load and hitting the sterilize setting.  Then I just keep the dishwasher door closed till I'm ready for the jars so they'll be hot.

In a large saucepan, combine peaches, onion, pepper, cilantro, garlic, cumin, vinegar, lime juice and zest, pectin and sugar.  Bring to a boil.   Reduce heat and let simmer for 5 minutes, stirring constantly. Remove from heat and carefully pour into hot jars leaving 1/4 inch air space.  Wipe tops of jars and place lids and rings onto them.
Process in a boiling water bath for 10 minutes.

OR, just let the salsa cool, add it to your container of choice and refrigerate till ready to use.

Bakery style Strawberry Muffins

New recipe! Can you even believe it?! Kirsti and I decided we need to get back in the habit of sharing our favorite recipes by sharing at least one a month so here you go:   I’m starting off with these scrumptious strawberry muffins. Extra large and fluffy, these muffins are bursting with strawberry bits and topped with the most delicious strawberry glaze. If you end up with extra glaze, go ahead and drizzle some extra.  No judgement here :)   Even if you already love the previous strawberry muffins on our blog, you need to try these- they are the only ones I'll be making from here on out.  They're that good!

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate.

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
