Peach Praline Muffins

I was looking for a way to use up some peaches and I came across these muffins.  Wow.  They were so delicious.  I had never had peaches in muffins before, and my first experience was quite a pleasant one.  If you have peaches to use up, give these a try.  I think you'll like them!












Peach Praline Muffins

Ingredients:
1 2/3 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup packed brown sugar
1/2 cup milk
1/3 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 cup chopped fresh or frozen (thawed and drained) peaches
1/2 cup chopped pecans

Topping:
1/4 cup packed brown sugar
1/4 cup chopped pecans
1 tablespoon cold butter

Directions:
In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the brown sugar, milk, oil, egg and vanilla. Stir into dry ingredients just until moistened. Fold in peaches and pecans. Fill greased or paper-lined muffin cups two thirds full. Combine topping ingredients until crumbly sprinkle over batter. Bake at 400 degrees for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
