Browned Butter and Dutch Cocoa No-Bake Cookies

No-Bake Cookies conjure up memories of childhood.  I think these were one of the first recipes I learned to make and would do so any chance I got.  I even got permission from my mom to make these when friends came over.  It's true.  I have always loved sugar, chocolate, and cooking.  Just in the genes I guess.  Anyway, I still crave these occasionally but have found that with my more "mature" adult palate I have had a hard time finding a recipe to really satisfy the need for a deep rich chocolate cookie.  Finally it dawned on me to just make my own. First I browned the butter to add some extra depth of flavor and then I added Dutch Cocoa instead of regular cocoa, for a more intense chocolate flavor, along with a few other changes.  Voila!  These are the cookies I have been looking for.  They are still so simple to make but they met my expectations completely.  I hope you'll try these out next time you need a quick chocolate fix :)




Browned Butter and Dutch Cocoa No-Bake Cookies

2 1/2 cups sugar
1 cube butter
4 TBSP Dutch Cocoa Powder
1/2 cup milk
2 tsp vanilla
3 cups oatmeal

Melt butter in a large, heavy bottomed saucepan over medium-low heat.  Stir and watch carefully until butter turns a light brown color.  Add milk, cocoa powder, and sugar.  Bring all ingredients to a full boil.  Let boil for 1 1/2 minutes.  Remove from heat and stir in vanilla.  Add oatmeal and stir in.  Drop by spoonfuls onto a sheet of waxed paper.  Let it sit until set.  About 30 min-1 hour.  Enjoy!

I seriously could not imagine a more perfect lemon cake.   Lemon flavor shines throughout the cake, but the real punch of flavor comes from the delectable glaze. The cake itself is so moist yet fluffy and tender at the same time.  It's like a ray of sunshine on a cold winter's day! 

Pumpkin Spice Donuts

I love this time of year when the temperature drops and it's perfectly acceptable to make and eat all kinds of pumpkin things! I've been meaning to try my hand at cake donuts for sometime now and these pumpkin ones were calling my name.  Unlike yeast donuts that require a few rises and fry up nice and fluffy, these cake donuts come together pretty quickly (with a small chilling period) and are more dense and moist in texture. The outside gets all craggy and crispy which is perfect for collecting all the sugary glaze.  Such a delicious combo of textures and perfectly flavored with pumpkin and spices.  We loved these!! Note: I tried making a few of these in the air fryer as an experiment and was amazed at the difference in texture.  Not in a good way.  The air fryer ones were much tougher and not craggy and crispy.  So stick with frying these in oil and you won't be disappointed.
