Triple Chip Blondies

I needed an easy and delicious recipe to bring to a family gathering last week and I went browsing blogs to find the perfect recipe.  These caught my eye and did not disappoint.  Everyone was wowed by them!  Definitely the best Blondies I've ever had.  Perfectly chewy and packed with Milk Chocolate, White Chocolate, and Butterscotch chips.  So yummy!











Triple Chip Blondies
from Our Best Bites

1 cup (2 sticks) salted butter
2 cups light brown sugar
2 teaspoons vanilla
2 eggs
2 cups all-purpose flour, lightly spooned into a measuring cup and leveled with the back of a knife
2/3 cup chocolate chips, plus 1/3 cup for drizzling on top*
2/3 cup white chocolate chips
2/3 cup peanut butter chips or butterscotch chips
1 teaspoon coconut oil or shortening

Instructions:

Preheat oven to 350. Spray a 9×13″ pan with non-stick cooking spray. Set aside.

Melt the butter. Combine in a large mixing bowl with the brown sugar. Add the vanilla and the eggs and beat on medium speed until combined. Add the flour and mix until just combined. Add the chocolate chips (excluding the 1/3 cup reserved chips), white chocolate chips, and peanut butter or butterscotch chips and mix until combined.

Transfer the batter to the prepared pan and bake for 20-25 minutes or until golden brown on top. Allow to cool completely. When cool, combine the reserved chips and the coconut oil or shortening in a small freezer zip-top bag, seal it, and heat it in the microwave in 15-second increments, mashing the bag with your hands until the chocolate and oil are smooth (repeat as long as necessary). Cut a small corner out of the bag and squeeze the melted chocolate over the baked blondies*. Allow to cool completely before cutting into bars.

* I omitted this step.  Didn't want the chocolate melting in little hands :)

Scrumptious Sugar Cookies

Sugar cookies are one of my favorite things to make with the kids! It's tradition to make them for a few different Holidays including Valentine's Day. While decorating is the usually the main purpose in making these, over the years I have tweaked the cookie recipe and frosting to make them absolutely scrumptious as well! So much yummier that buying a store-bought mix and canned frosting.  I would even be so bold as to say I think they are every bit as good, if not better, than Swig and Crumble! Give them a try and see if you agree.   My Scrumptious Sugar Cookie Frosting is an ultra creamy, cream cheese frosting with a few extra additions that put it over the top! Sour Cream adds to the creaminess and takes the sweetness down a notch.  The frosting is still plenty sweet but not sickeningly so.  Butter Vanilla Emulsion is my other secret weapon that really elevates the flavor of this frosting! Great Harvest Pumpkin Chocolate Chip Bread

Kirsti sent me this recipe about a year ago and we've made it several times since.  It's easy and delicious!  I love making Pumpkin Bread in the fall when the scent of pumpkin and sweet spices fill up my kitchen.   Sometimes I surprise Brynlee with this for an after school snack and it never fails to brighten her mood after a long day.  In fact, I think this delicious pumpkin bread would brighten anyone's day!
