Lunch Lady Brownies



     I think this pictures says it all!  I have looked so long for  a brownie recipe that will meet the "Mike" approval.  When it comes to brownies, he likes them "fudge like" not "cake like." When I saw this picture, I saw fudge like, so I had to give it a try.  Man was I happy I did.  These were "fudge like," full of vanilla flavor and just plain divine.  I love a good brownie hot out of the oven.  This recipe is a keeper for sure.  If you have a picky brownie eater like I do, give this recipe a try.  
     I did not try the frosting for this recipe, I cut up the brownies and layered them with fresh whipped cream and diced strawberries, yum. See what new recipe you can come up with to use these brownies for.

Lunch Lady Brownies

Ingredients:
1 cup of butter (I use unsalted)
1/2 cup of unsweetened cocoa
2 cups of all purpose flour
2 cups of sugar
4 eggs
4 teaspoons of vanilla
1 cup of chopped nuts (optional)

Directions:
I melt the Butter in the microwave and put into my mixing bowl, then I add cocoa and mix together until smooth.

Add flour, and sugar. Beat together and then add eggs, vanilla, and nuts. Mix until combined. Do not over stir.

Pour into greased, floured 9x13 baking pan*.

* An additional part of this recipe said that if you want to double the recipe, use a large baking sheet.

Additional Note * This batter will not be runny like a cake mix. You might have to spread it out over your pan with a rubber spatula.

Bake 20-25 minutes @350 F or until done. I would check at it at 20 minutes.

The Chocolate Icing Recipe:

To make while the brownies bake

1/4 cup of softened Butter
1/4 cup of Evaporated canned Milk (regular milk is fine)
1/4 cup of unsweetened Cocoa
3 cups of Powdered Sugar
Dash of Salt

Mix all together and frost as desired.

Wait only about 10 minutes to frost brownies.
Frost them while they are warm (not hot).

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Healthier Chocolate Banana Muffins

 I know, I know.  We already have like 5 banana muffins posted on this blog.  I have put off posting this recipe because of that fact, but here's the thing.  While those muffins are all delicious and great in their own way, when I have ripe bananas you know I'm either making these muffins or banana bread.  More often, these muffins because they are perfect for a grab and go snack or breakfast.  My family LOVES these muffins! They have such a deep chocolate flavor and are so moist.  What my family doesn't think about, but I love, are that these muffins are healthier than your average muffin.  They are made with whole wheat flour, coconut oil, greek yogurt for extra protein, and have less sugar that most other muffins.  These are best warm (they can be reheated in the microwave for 10 seconds) and those bites with melted chocolate chips are the absolute best!
