There is nothing fancy about these eggs. In fact, this really isn't even a recipe, more of a handy tip. I had heard of making "hard boiled eggs" in the oven before but hadn't given it a try till now. I've struggled with making hard boiled eggs in the past. It was always a hassle to watch the pot till it started boiling to make sure they were done for just the perfect amount of time, and even when they seemed to be cooked well I had issues peeling them. With these eggs, you just put them in the oven and set the timer. Done.
No waiting around. I found that the eggs were much easier to peel this way also. I mean, look how pretty those eggs are! I haven't peeled an egg that smooth in a long, long time. These are great to keep around for snacks, lunches, etc. The eggs did come out of the oven a little speckled with brown spots so if you are dying these and don't want speckles on your eggs, that may be something to keep in mind. Otherwise, these are exactly the same as hard boiled eggs, only easier to make.
Baked Eggs
Directions:
Pre-heat oven to 325 degrees F. Place 12 eggs in a muffin tin. Bake for 30 minutes then place eggs in an ice bath for 10 minutes. Peel and enjoy!
