Scrumptious Strawberry Frosting


I haven't made cupcakes in so long! When Valentine's Day was right around the corner I decided that I wanted to make some cupcakes to send into work with Aaron.  Just for fun! It seems like in the past I've always done some sort of chocolate so this year I decided to mix it up with a fruity frosting.  It ended up being amazing! I came across the idea of using Freeze Dried Strawberries for the flavor and it worked like a charm. The frosting is bursting with strawberry flavor, but without the moisture, and I even got this beautiful color to boot!  Although I made these for Valentine's Day, I'm thinking they would be perfect for Spring/Summer.  I paired these with some lemon cupcakes but they would be delicious with a variety of cakes.

Scrumptious Strawberry Frosting

yield:  Makes enough to generously frost 1 1/2 dozen cupcakes.  I would double it for a layer cake. 

1/2 cup butter, softened
4 oz cream cheese, softened
1 pkg Freeze Dried Strawberries
3 cups powdered sugar
3-4 TBSP Heavy Whipping Cream
1/2 tsp vanilla


In a food processor or blender (it will have to be a good one), blend the strawberries into a powder. Strain through a fine mesh sieve to remove any larger pieces and set aside.

Mix butter and cream cheese together in stand mixer until light and fluffy, about 3 minutes.  Slowly add in the strawberry powder and powdered sugar until fully combined.  Add the vanilla and cream until the desired consistency is reached.

*Notes:  I found my strawberries at Sprouts.  They also have them at Trader Joe's.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
