Pumpkin Pie French Toast

With autumn official here, the pumpkin recipes are coming out.  Already my kiddos are telling me no more pumpkin! But, I can not help myself, I love pumpkin. Not only does it taste wonderful, it make a moist and yummy baked good.  My sister asked for a pumpkin french toast recipe and I thought I had already posted this.

With this recipe, I made a cinnamon syrup that really works well with this.  I think next time, I might add a little nutmeg as well to add to the flavor.  Nothing better than french toast with a hint of pumpkin and warm cinnamon syrup to start the day off right.  I hope you enjoy this as much as we do,  Stay turned for more pumpkin recipes, despite my kids complaining!



Pumpkin French Toast

INGREDIENTS:

3 large eggs
3/4 cup milk
1/2 cup pumpkin puree (not pumpkin pie filling)
1 tablespoon light brown sugar
1 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
Butter, for griddle or pan
10 slices Texas toast or other thick-sliced bread
Maple syrup, butter, and powdered sugar, for serving

DIRECTIONS:

1. Preheat electric griddle and set aside.
2. In a 9x13 pan or a large mixing bowl, whisk together eggs, milk, pumpkin, brown sugar, vanilla extract, cinnamon, and pumpkin pie spice.
3. Butter the preheated griddle. 



Cinnamon Syrup:

  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup buttermilk
  • 1 tablespoon vanilla extract

  • 1 tablespoon corn syrup
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda

Directions


  1. Bring butter, sugar, buttermilk, vanilla extract, corn syrup, and cinnamon to a simmer in a large saucepan over medium-high heat. Once simmering, whisk in baking soda, and cook for 10 seconds before removing from heat. Serve warm.

Chocolate Covered Cream Balls

Several years ago, I sampled a Milk Chocolate Coconut at See's Candies.  It was love at first bite.  Ever since then I have made a mandatory stop every time I went into the mall to get one of these delicious chocolates.  I love them so much !  However, there are two things I didn't like about them.  1) I had to go to the mall to get them, and 2) they are SO expensive.  I think the last time I was there I paid about 75 cents for 1 chocolate. 

Bread Twists

These are my new go-to bread sticks for two reasons - taste and time. They have a wonderful buttery/garlic flavor and the kosher salt adds a delightful savory crunch.  The other thing I love about these is how quickly they come together.  It only takes one hour from start to finish.  One hour!  That's almost unheard of for a yeast bread.  Try these out next time you want some bread with your dinner but are short on time.
